How it works
Between two volume units (cups, spoons, ml) or two weight units (grams, ounces), it's a straight conversion. Between volume and weight, it depends on the ingredient: a US cup of plain flour weighs about 125 g, but a cup of sugar about 200 g. Pick the ingredient for the right answer.
Weights per cup assume the ingredient is spooned in and levelled, not packed (except brown sugar). For baking, weighing is always more accurate.
Worked example
1 US cup of plain flour is 236.6 ml × 0.528 g/ml = 125 g. 1 cup of caster sugar is about 200 g, and 1 cup of butter about 227 g (two US sticks).
